I love to cook and sometimes it gets hard to use your very modest budget to eat what you really want!! Right now I am saving up for certain items for Thanksgiving by checking my pantry and refrigerator to prepare a dish!! I prepared this Ham and Black Eye Pea Soup by using a saved Ham bone from last month, less than a cup of Black Eye Peas, left over Vegetable broth, chopped onions and diced carrots, a few springs of Italian Parsley, two springs of Rosemary, black pepper to taste, and enough water to cover the beans and chopped veggies! After bring items in the pot to a Boil, I simmer this bean soup for 2 hours while stirring the soup every 15 mins!

After that, cool and de-bone any ham meat back into the bean soup and serve hot!! My soup came up to 3 servings which is find by me if you are eating a single person lunch or dinner (I always treat my son like a Prince so I am eating this to save to cook something better for my child). And no I wouldn't serve this to my friends or house guest, just me!!

Next week for lunch, I will tackle with improving these items that I have found in the pantry, a favorite college or broke girl budget staple!
Sometimes to reach your goals in life, budget or shoestring meals are the way to goal!
