I was feeling the pinch on what I can bake for a desert on a budget thanks to massive automotive bill taking a chunk out of my monthly check! But I discovered I had this Angel Food cake mix and Simple Truth Lite Coconut Milk to substitute for the water called in the box recipe!! Above is the finished batter in a bundt pan ready to cook in the oven!!

Here I used room temperature/softened butter, about a cup of Confectioner sugar, and a few teaspoons of the remaining coconut milk!

Here is the coconut flavored frosted Coconut Angel Cake using a box angel cake mix and Simply Truth Lite Coconut milk!! My family and I tried and loved this economical, easy cake!!
