I have successfully created a simple butternut squash soup using a roasted butternut, chicken broth, and less than a teaspoon each of nutmeg, black pepper, onion powder, and salt!! After using a blender to puree the roasted squash, I use a little of broth to smooth it and transferred to the saucepan!! After adding the seasoning, I brought the soup to a boil then simmer for less than a hour before I poured a generous adult portion into my bowl for lunch!!! Now that I know I can make this easy soup, I will be making more for Fall!! :)
